When I started roasting coffee for my old café Brewed in 2018, The business was running smoothly, and I was looking for the next exciting challenge. I had no idea just how obsessed I'd become.

What fascinates me about speciality coffee is just how much flavour can be influenced by roasting. Two coffees from opposite sides of the world might need completely different approaches, and even small changes to a roast profile can have a huge impact on sweetness, acidity and how the coffee brews at home. It's a never-ending learning process, and that's what keeps me excited every week.

I roast small batches of single origin coffee every week, giving each coffee time to rest before it's at its best. Having Bond Street Coffee in Brighton as our café is a huge advantage too. It means I get to brew these coffees every day as espresso and filter coffee, constantly tasting, tweaking and learning how they perform in the real world, not just on a cupping table.
