Las Lajas from Costa Rica is a vibrant specialty coffee with bright fruit character and refined sweetness. Processed with precision and roasted for filter brewing, it shines in V60, AeroPress and batch brew at home. Expect clarity, structure and layered acidity.

Las Lajas is a family-run farm and mill located in Sabanilla de Alajuela, Costa Rica, owned by Oscar Chacón Solano. Following the passing of their father in 1988, the Chacón siblings chose to reshape the family farm with a strong focus on environmental responsibility, long-term employment for their team, and preserving coffee culture within their community.

In the early 2000s, Oscar and Francisca Cubillo, third-generation producers, founded the Las Lajas Ecological Benefit to process coffee exclusively from their own farms. Their pursuit of quality and innovation led them to pioneer natural and anaerobic processes in Costa Rica, most notably during 2006 when an earthquake made traditional washed processing impossible.

This lot is processed using Las Lajas’ Black Diamond method. After pulping, the coffee is left with 100% of its mucilage and undergoes a prolonged 100-hour anaerobic fermentation. It is then slowly dried on raised beds over 15 to 20 days, allowing flavour complexity to develop while maintaining clarity and balance.

Grown at 1500–1700 masl, this coffee reflects the careful stewardship and technical precision Las Lajas is known for. Expect a layered cup with ripe fruit sweetness, fermentation-driven depth, and a clean, structured finish.
